This is my version of recipes inspired by Giovanni’s Shrimp Truck in Hawaii.
The chunks of caramelized garlic with lemon butter harmonized well which is creamy, soft, and rich.
Also, parsley gives a certain green and grassy aroma and peppery flavour and lemon juice gives a citrus flavour.
The butter sauce neutralized the high acidity also refreshing. Furthermore, acidity relieves saltiness and makes a perfect balance.
Ingredients

6 sliced to half, black tiger shrimp

10g (2-3 cloves) minced, garlic

15ml lemon juice

20g unsalted butter

10ml extra virgin olive oil

7g parsley fresh chopped
-
24g cheese spread (12g garlic cream cheese+ 12g feta cheese)

12 crackers
-
chives, for garnish

25ml extra virgin olive oil

2g salt
-
8g cajun spice mix
(2g black pepper + 2g paprika powder + 2g cumin + 2g cayenne pepper)
to marinade
Directions
Cut the shrimp into half.
In a small bowl combine cajun spice mix, salt, and olive oil. Marinate for 30 mins.
In a pan, melt the half of butter and olive oil on medium heat.
Sauté the shrimp and when it’s cooked, remove it from the heat and set aside.
Melt the left half butter in the same pan and add garlic and heat until become fragrant.
Place shrimp back into the pan. Add parsley and lemon juice.
To assemble the canapés, spread cream cheese on each cracker. Top each with shrimp and garnish with the chive.

You can substitute shrimp for scallops.
