Confit is a French cooking technique: cooking food in fat over low heat for a long time.
Cloves infused with a sweet rich flavor and become very soft, sweet, and rich.
The whole cloves of garlic need to be peeled and gently submerged in a generous amount of oil, such as olive oil or vegetable oil. Simmer over low heat for an extended period of time. This process allows the garlic to slowly cook and soften without browning or becoming crispy.
Once garlic confit is ready, seal it in a jar and store it in the refrigerator for a couple of weeks which allows the flavors to get rich.
The garlic confit can boost flavor easily. Spread them on sourdough bread for a quick garlic bread toast or mix them with butter for steak.
Ingredients

400g Peeled, Garlic cloves

350ml Extra virgin olive oil

4 springs Thyme
-
2 springs Rosemary

1/2 tsp Black peppercorns
Directions
In a small saucepan, place the peeled garlic cloves and add extra virgin olive oil to completely cover the cloves.
Add the thyme, rosemary, and black peppercorns for additional flavor.
Place the saucepan over low heat and bring the oil to a very gentle simmer. It should be just barely bubbling.
Simmer the garlic cloves in the oil for about 1- 1.5 hours, or until the cloves are tender and easily pricked with a fork. Stir occasionally to ensure even cooking and to prevent the garlic from sticking to the bottom of the pan.
Remove the saucepan from heat and allow the garlic cloves to cool completely in the oil.
Once cooled, transfer the garlic confit to a sealed container, making sure the cloves are completely submerged in the oil to help preserve the cloves and prevent them from spoiling.
Store in the refrigerator for a couple of weeks.
To use the garlic confit, simply remove cloves from the oil as needed and use them in your favorite recipes. The oil can also be used for cooking.
