Salmon poke bowl is super simple to make and light meal.
I tried the original Poke form Hawaii in honeymoon and it was so fresh and fast. You can make your own poke with any ingredients.
The salmon is typically marinated in a soy-based sauce, along with sesame oil, and other seasonings.
Usually, many people use tuna but also salmon goes well.
Ingredients

350g sashimi, salmon, diced

1 green onion, chopped

1/2 avocado, thinly sliced

1/4 cucumber, thinly sliced

1cup brown rice

20g garlic, minced

1 tbsp rice wine vinegar or apple cider vinegar

2 tbsp soy sauce
-
1 tbsp brown sugar
-
1 tbsp sesame
-
1 tbsp sesame oil

1/2tbsp chill powder
to marinade
Directions
Cut the salmon into sizeable chunks.
In a small bowl combine garlic, rice wine vinegar, soy sauce, sugar, sesame, sesame oil and chilli powder.
Cover and marinade for 30mins to 1 hour in refrigerator.
Chop the green onion and slice cucumber and avocado.
To serve, place a rice into a bowl and top with marinaded salmon, sliced cucumber, sliced avocado and topped with chopped green onion.

Make sure to buy a high quality salmon that can you eating it raw; also, you can find easily in Korean market and Japanese market as well.
It’s labeled as “sashimi”. I used brown rice in my bowls nut you can also use white rice mixed with rice vinegar, sugar and salt.
